Asparagus Wrapped with Puff Pastry and Turkey Bacon

Asparagus wrapped and baked in puff pastry  is nothing new, but if you love asparagus, it's a great way to serve it. 

This recipe was an innovation for me because I had two strips of turkey bacon in the fridge and when I went to get the asparagus, the idea struck me.

I heated the oven to 375 degrees F. 

I sliced the two strips of bacon into thinner strips length-wise, about a third of an inch wide. Then I cut them in half so that the thin strips ended up being about four or five inches long each. I fried them in a non-stick skillet, then set them aside while I rolled out the sheet of puff pastry and cut it into long, 1/2 wide strips. 

I washed the asparagus, snapped off the thick ends, then patted the asparagus dry with paper towels. 

With everything lined up, I took the cooled thin strips of bacon and placed them on the puff pastry strips, pushing down gently so they would embed themselves into the dough. I then wrapped each asparagus stem, placing each one next to another on a non-stick baking sheet. 

I placed the baking sheet on the middle rack and set the timer for 15 minutes. That was plenty of time to brown the bottom sides of the puff pastry, but not the tops. Five more minutes would brown the tops just slightly.

The dipping sauce I used was a vegan "blue cheese" dressing which was surprisingly delicious since there was no blue cheese.
